Caroline Kothe is a PhD student in the Food Microbiome Ecology team. She studied Food Engineering at UFRGS (Brazil) with an exchange at AgroSup Dijon (2012-2013). Today, Caroline studies halophilic and halotolerant bacteria in French artisan cheeses and the microbial diversity of Brazilian traditional cheeses.
