Marine Zagdoun is a biotechnology engineer. With a general training background in agronomic engineering at ENSAIA (Nancy, France), she directed towards biotechnology fields in 3rd year and during her end-of-studies internships. She had a 3-month internship on artificial skin reconstruction in Thailand and a 5-month internship on enzymatic production by a filamentous fungus in bioreactor at Institut Français du Pétrole et des Energies Nouvelles in Solaize, France. Today, in the context of HAMAQ project (Ham Accurate Quality), Marine is in PhD at INRA, in partnership with a food industry. Her purpose is to identify the impact of the process environment on the dynamic of cooked ham bacterial ecosystem. Her work is specifically focused on the identification of potential bacterial spoilers of cooked ham using global metagenomics and metagenetic approaches.
